So you all obviously know my obsession with Balance Bar. Well, it was Chocolate Covered Anything Day a couple weeks ago (I know, right? Can we make that a more recognized national holiday already?), so I got some inspiration to use their chocolately goodness for a new (and SO easy) NYE party recipe. Plus, I’m all over this flavor during this time of year. Mint is the new pumpkin spice, after all.
This recipe is perfect for a classy ass NYE party, or for a winter holiday girl’s night. It’s as “healthy” as healthy chocolately dessert can be, so it’s obviously guilt-free. You can be all like “Yea (insert name of hot and obviously health conscious guy you’re kissing at midnight) this ice cream is supes good for you, 23 vitamins and minerals and a friggin’ ton of protein in the minty chocolate chunks alone, made it from scratch!”

Mint Chocolate Ice Cream Balls
(serves 8)
Ingredients:
2 mint chocolate cookie crunch Balance Bars
4 heaping scoops of homemade or store-bought Vanilla or mint ice cream
Directions:
1. Chop up mint Balance Bar into small squares.
2. Stir into the ice cream and refreeze for a couple of hours.
3. Scoop into mini balls and garnish with blueberries, mint leaves, or any other fun garnish!
Serve in martini glasses or any other fun party way you’d like!
